Burgers!


Today was Labor Day and I decided to make burgers at home for our dinner. Not just any burger but something almost entirely made from scratch. Equally challenging was the fact Yoshiko typically does not eat red meat.

I started with two aged ribeye steaks that I coarsely ground and very lightly seasoned. Using a burger press I made uniformly sized burgers without overhandling the meat. They were quickly grilled on a cast iron grill on the BBQ.

The night before I prepared a homemade ketchup and dijon butter. I grilled slices of red onion and some aged cheddar atop the burgers. Of course I let the burgers rest for five minutes before building the burgers.

I served the burgers with a Montepulciano d'Abruzzo Marina Cvetic. Thumbs up from Yoshiko!
